Jess's Chocolate Cake

I just posted a photo of a chocolate cake I made, and since the vote for the recipe was a success, here I am :)
I made it for the first time when I was craving a moist, simple chocolate cake with just the right amount of sweetness. So I went hunting for recipes on Dani Noce's blog and looking at photos until I found one that was exactly what I was imagining.

Jess's Easy Chocolate Cake Recipe

I found one that was close, but I ended up adapting some ingredients. The final recipe turned out like this:

DOUGH INGREDIENTS  🍰

  • 1 + 1/3 cup all-purpose flour

  • 3 eggs

  • 150g chopped semi-sweet chocolate

  • 1 cup sugar

  • 3/4 cup oil

  • 1 small bottle (200ml) light coconut milk

  • 2 tbsp cocoa powder

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • 1 tsp baking soda

  • Juice of half a lemon

  • 1 pinch of salt

FROSTING INGREDIENTS  🍰

  • 150g chopped milk chocolate

  • 1 small box (200g) heavy cream

  • 1/2 tbsp butter

  • 1/2 tsp cinnamon

PREPARATION METHOD  🍰

1. In a saucepan, combine the coconut milk and chopped chocolate. Heat and melt over low heat. When both are mixed, add the lemon juice, vanilla extract, oil, and cocoa powder. Mix well until smooth and turn off the heat.
No need to boil, just mix everything, okay? Set aside.
2. In a mixer, beat the 3 eggs with the sugar for 2 minutes on medium speed.
3. Sift the dry ingredients (flour, salt, baking soda, baking powder) over the egg mixture and beat until everything is combined.
4. Then, add the chocolate mixture from the saucepan and beat everything until you have a homogeneous batter.
5. Grease a round pan (like a pudding mold) with butter and bake at 180°C (350°F) for about 30 minutes.
6. When a toothpick inserted comes out clean, it's done.
7. While the cake is in the oven, you can make the frosting. In a double boiler, melt the butter over low heat and add the chocolate. When it starts to get creamy, add the heavy cream, cinnamon, and mix well. It will be soft but a little firm :)

    Então, como havia dito, mudei alguns ingredientes: usei farinha de aveia, açúcar demerara, óleo de coco, cacau e chocolate meio amargo na cobertura também. Ah! E bati as claras em neve antes de misturar na massa. Aí, o bolo ficou bem fofinho. ?
